Overview
Mandan Bride is an open-pollinated flour corn associated with the Mandan people along the upper Missouri, historically grown in Three Sisters plantings with beans and squash. Each 7 to 8-inch ear carries 8 to 12 rows of soft, starchy kernels in a random assortment of white, yellow, red, black, and orange. Because the kernels are soft rather than hard like flint, they grind easily into flour or grits. Plants reach 5 to 6 feet and need a long season; leave ears on the stalk until the husks are papery, then cure indoors before grinding. The colorful ears are also popular for autumn braids.
