Overview
Thai Green is a midseason eggplant bearing slender, tender fruit about 12 inches long with light green skin and white flesh; it resists drought and needs no peeling. Plants are exceptionally heat tolerant and keep producing through summer heat when other types slow, and in warm zones two plantings, late winter and midsummer, give nearly year-round harvest; in mild winters they may even regrow from the base. Start indoors 8 to 10 weeks before transplanting into fertile, free-draining ground in full sun. Harvest young for the best texture and use in curries and stir-fries where the fruit holds up in long simmering.
