Overview

Casper, also called Casper White, is an early to mid-season eggplant with shiny ivory fruit about 6 inches long and 2 to 3 inches wide and snow-white flesh. The flavor is mild and sweet without bitterness, the skin is tender enough to leave on, and cut flesh browns less than purple types, which helps in gratins and stuffed dishes. Plants are compact and well branched and set fruit steadily through summer. Start indoors 6 to 8 weeks before transplanting into rich, free-draining ground in full sun once nights stay above 55F. Pick young and glossy; a yellowing skin means overripe and bitter fruit.
