Overview
Apple Green, also written Applegreen, is an early open-pollinated eggplant and an AAS winner with smooth fruit of about 6 by 4.5 inches in a light apple-green skin. The flesh is mild, tender and nearly seedless and browns less than purple types after cutting. Compact plants set heavily over a long season and do well in raised beds or large containers. Start indoors 6 to 8 weeks before transplanting into fertile soil in full sun once nights stay above 55F. Harvest while glossy and firm at roughly baseball size, since overripe fruit dulls and toughens.
