Overview

Candy Roaster is a Cucurbita maxima heirloom from the Southern Appalachians, grown for generations in the North Carolina and Tennessee mountains. Fruit is elongated and banana-shaped, 12 to 20 inches long and sometimes 15 to 30 pounds, with skin ranging from pinkish tan to salmon and frequently tipped blue-green near the stem. The orange flesh is dry and sweet and roasts to the candy-like flavor the name promises. It wants warm weather and a long season of 90 to 110 days or more, so sow an inch deep in a compost-rich hill after frost, thin to the strongest seedling and give the vines space. Cure two weeks in warm dry conditions; it keeps three to five months.
