Overview

Watermelon radish is a Chinese type known under many names, including Red Meat, Shinrimei, Roseheart, Beauty Heart, and Mantang Hong. The round roots are 2 to 4 inches, white with green shoulders on the outside, and a vivid pink to magenta inside, so a crosswise slice mimics a small watermelon. Flavor is milder and sweeter than a small red radish, with a crisp, juicy bite. Spring sowings bolt, so plant from summer into fall; roots grown into cool weather color up best and taste mildest. Give it deep, loose soil, thin to 4 to 5 inches, and keep moisture even. Slice thin for salads and platters or pickle it.
