Harvesting Rye: Hard Dough, Threshing, and Checking Every Grain for Ergot

Rye is cut at hard dough and threshes cleanly, which makes it the easiest cereal to take to edible grain at home. The one step you cannot skip is sorting: any dark, hard, misshapen grain is ergot and is discarded.

Knowing when the grain is ready

Rye tells you it is ripening in a sequence you can watch. First the ears, which stood upright through flowering, bend over and hang. Then the color goes out of the straw from the base upward, until the whole stand is a pale gray-fawn rather than green. The ears themselves lose their bloom and the awns spread. From the day the ears start nodding, check the grain daily.

The test is done with a thumbnail on a kernel taken from the middle of an ear, since the middle ripens last. At milk stage a kernel bursts into white liquid, far too early. At soft dough it squashes flat like putty. At hard dough it dents under the nail and holds the dent but no longer squashes, and the inside is firm and waxy. That is when you cut. Wait past it, for kernels that are glassy and cannot be dented at all, and the crop begins shattering at the neck of the ear and you lose whole heads to the ground.

Cutting at hard dough leaves the grain at around twenty percent moisture, which is too wet to store, so the crop is dried after cutting rather than left standing to dry on the plant. This is the trade that matters: standing grain dries in the field but sheds; cut grain does not shed and dries under cover. On a garden scale, where you cannot afford to lose a tenth of the crop to the soil, cut early and dry it yourself.

Cutting, tying and drying

Rye is tall, so cutting is easier than it looks: you take a handful of stems at chest height, cut low with a sickle or shears, and the whole bundle stays in your hand. Do this on a dry morning after the dew has lifted. Wet straw does not dry properly in a bundle and molds from the inside, which is the commonest way a home cereal crop is lost after a successful season.

  1. Cut low and gather as you go Grip a handful of stems well below the ears, cut two to four inches (5 to 10 cm) above the ground, and lay each handful in the same direction on the ground with all the ears at one end.
  2. Tie into sheaves you can get a hand around Bundle about as much as your two hands can circle and tie twice with string, once near the base and once halfway up. Bundles any fatter than that will not dry through the middle.
  3. Stand the sheaves in stooks to finish drying Lean six to eight sheaves together, ears up, so they hold each other like a tripod and air moves through. Outdoors this takes one to two weeks in dry weather; under cover in a shed or greenhouse, about the same with no weather risk.
  4. Test dryness before you thresh A kernel should shatter rather than dent when you bite it, and straw should snap crisply instead of bending. If either fails, give it more time. Threshing damp grain smears it and it will not store.
  5. Bring it in ahead of any wet spell Grain that has reached hard dough and is then rained on repeatedly sprouts in the ear. If a long wet forecast arrives while the crop is standing, cut it and move it under cover rather than waiting.

Threshing and winnowing: rye comes clean

This is where rye rewards you. Unlike hulled barley, rye is free threshing: the husk lets go of the grain during threshing exactly the way wheat does, so what you sweep up is grain you can mill and eat with no pearling, abrasion or special equipment. For a home grower, that alone makes rye the most practical cereal to attempt on a small plot.

Threshing at garden scale is a matter of beating the ears. Lay the sheaves ear-inward on an old sheet or tarpaulin and hit them with a stick or a length of batten, or hold a bundle by the base and beat the ears against the inside wall of a clean bin. Ten to fifteen minutes of steady work handles a small crop. Then lift out the straw, shake it over the sheet, and what is left is grain mixed with chaff and broken awns.

Winnow outdoors on a day with a light steady breeze. Pour the mixture slowly from one bucket into another at about shoulder height and let the wind carry the chaff sideways while the heavier grain falls straight down. Repeat three or four times, turning so the wind stays across you. A box fan on a low setting does the same job indoors and is easier to control than real wind. Finish by sieving to take out the last of the broken straw.

Sorting for ergot: do this before anything else

Spread the cleaned grain in a thin layer on a pale tray or sheet, in good light, and go through it. You are looking for ergot, which is a fungal body that grows in place of a grain in the ear. It is unmistakable once you know it: dark purple to black, hard, longer and narrower than a rye kernel, often curved like a small horn, and it protrudes from the ear before harvest so some of it will already have caught your eye in the field.

Ergot is genuinely toxic. It contains alkaloids that constrict blood vessels and affect the nervous system, and it does not break down in baking or brewing. Rye is more susceptible to it than any other cereal, because ergot infects through the open flower and rye is the one cereal whose flowers open wide for wind pollination. This is not a theoretical risk in a crop grown at home; it is the specific reason home-grown rye is sorted by hand.

The rule is simple and absolute: any grain that is dark, hard, misshapen or noticeably larger or longer than the rest is discarded, along with anything you are unsure about. Do not attempt to salvage a doubtful kernel. Burn or bin the culls rather than composting them, since the fungal bodies survive in soil and start next year's infection. Wash your hands after sorting.

If more than the odd kernel in a batch is ergot, discard the whole batch rather than sorting it, and do not save seed from that crop. Ergot bodies fall to the ground and germinate the following spring, so a badly affected plot should not grow rye again for two years and the surrounding grass should be cut before it flowers.

Storing the grain, and what to write down

Sorted, dry rye stores well in a sealed jar or tin in a cool dark cupboard and keeps for a year or more as whole grain. Milled flour is a different matter: rye is comparatively high in oil and the flour goes rancid noticeably faster than wheat flour, so mill in small amounts as you need it and keep any surplus flour in the freezer. Check stored grain a fortnight after putting it away, because grain that was slightly too damp will show condensation on the inside of the lid, and that is the moment to spread it out and dry it again rather than lose the lot.

Record the date you cut, the weight of clean grain and the area it came from, so a good year and a bad year can be compared rather than remembered. Note how many days passed between the ears fully emerging and the day you cut, since that interval is far more portable between seasons than any calendar date. Note also how much ergot you found, even if it was none, because a year with a wet flowering period and a year without will differ sharply and the pattern only becomes visible across several seasons.
