Overview
Polish Linguisa is an heirloom paste tomato from Poland whose long, slightly curved, sausage-like fruit sets it apart from blocky Roma and San Marzano types. Deep red and dense, the fruit has hardly any seed cavity, so it reduces into a thick sauce with only a short simmer. Vines are indeterminate and heavy bearers over a long season; stake or cage at planting because the elongated clusters get heavy. Process fruit soon after it colors fully, since the thin skin can split after heavy rain more readily than modern paste hybrids. Start indoors 6 to 8 weeks before the last frost and plant into a rich, freely draining bed in full sun.
