Overview
Cesare's Canestrino di Lucca is a rare heirloom sauce tomato that Chef Cesare Casella brought to the United States from his hometown of Lucca, Italy. The deep red fruit is heavily pleated into lobes, and the flesh is very dry with a flavor full of umami and sweetness, which is exactly what a sauce tomato should be. It also makes a good fresh tomato where drier flesh is an advantage, as in salads. Plants are indeterminate, so stake or cage them. Canestrino means little basket, a nod to the shape.
