Overview
Zapotec Pleated is a Mexican heirloom from the Zapotec people of Oaxaca, and its deeply ribbed, pleated pink to orange-red fruit looks nothing like a supermarket tomato. The heavy ribbing creates a hollow center, so a fruit of roughly 8 to 16 ounces can be seeded and used as an edible container in the style of stuffed chiles or baked tomatoes. Walls are thick and meaty with a sweet-tart flavor, and there is little of the gel that makes big tomatoes watery. Vines are indeterminate and must be staked or caged, with harvest starting around 80 days from transplant. In hot climates a fall planting often gives better-colored fruit.
