Overview
Kermit is an early hybrid Thai eggplant: prolific, compact plants bear round 2-inch fruit with a white blossom end, deep green striped shoulders and a green calyx. Harvest young at golf-ball size for firm, crisp, nearly seedless flesh that holds its shape in green or red curry, stir-fries and stews, the way Thai cooks use it, dropped in whole or halved. Plants thrive in heat and humidity and keep producing through the hottest weeks. Start indoors 6 to 8 weeks before transplanting into rich, free-draining ground in full sun once nights stay above 55F.
