Overview
Hungarian Yellow Wax, usually sold as Hungarian Sweet Wax or simply banana pepper, is the mild pickling pepper of American gardens. Long, tapered, waxy-skinned fruit of 5 to 7 inches is picked pale to golden yellow and can be left to turn orange and red for a sweeter flavor. It looks like Hungarian Hot Wax at the yellow stage but carries virtually no heat. Start seed 6 to 8 weeks before transplanting at 78 to 85F and set out in full sun after frost. Plants are prolific; pick often. The thin walls take up brine quickly and hold their shape in the jar, and the fresh fruit is crisp and sweet in salads or stuffed with cream cheese.
