Overview
Shishito is the Japanese frying pepper, mostly mild with a citrusy, slightly smoky flavor and the famous surprise: roughly one pod in ten carries real heat. Fruit are slender, 3 to 4 inches by about 1 inch, thin-walled with wrinkled green skin, and heat sits between a sweet pepper and a true hot one, around 50 to 200 Scoville units. Start seed indoors 6 to 8 weeks before the last frost and transplant after the soil warms; the first pods come around 60 days. Pick them green and small, blister them with oil and salt in a hot skillet or over the grill, and harvest often because the plants are very productive.
