Overview
San Marzano is the Italian paste tomato from Campania that sets the standard for sauce. Fruit is red, elongated, about three inches by an inch and a half, flat sided with a pointed end, dense and low in moisture with few seeds and mild acidity, and it is not pithy when young. Plants are indeterminate and vigorous, five to six feet, so cage or stake them; pruning to two or three stems gives larger fruit. Plants sold in the US can behave differently from those grown in Italian soil. Heirloom, about 85 days from transplant. Where summers are extreme, plant for spring and again for fall.
