Overview

Parisian Pickling is the classic French cornichon cucumber, grown for the tiny sour gherkins served with pate and charcuterie, though the fruit is fine eaten fresh as well. Timing is the whole trick with this one: pick the fruit very small at around 50 to 60 days if you want cornichons, or leave it another few weeks, to 70 or 80 days, and use it as a slicer. Gardeners who want true gherkins should walk the row daily, because the fruit passes the cornichon stage fast. You may also see it sold as 'Improved Bourbonne' or 'de Bourbonne'.
