Overview

Crystal Apple is a slicing cucumber that was once a favorite in Australia and New Zealand, though it likely came from China, and it is also sold as Apple Shaped. The fruit is round to oval, about 3 inches, ripening from green to creamy white and then ivory yellow. The very tender skin has no bitterness at any stage, and the flesh stays crisp, mild, and sweet even when the fruit gets big. Pick while the skin is white to pale ivory, before yellow sets in, while the seeds are still small. It is more heat-tolerant than most slicers and less prone to bitterness in hot weather, so it suits warm-climate gardens well. Sow an inch deep after the last frost into warm, fertile soil. The vines can sprawl or climb; on a trellis the fruit stays cleaner and is easier to find. Harvest runs about 65 to 75 days from seed.
