Overview
NuMex Joe E Parker is the workhorse green chile of New Mexico, released by the Chile Pepper Institute at New Mexico State University (breeders Bosland, Iglesias and Gonzalez) as a more uniform selection out of New Mexico 6-4, with resistance to tobacco mosaic virus. Medium-tall plants bear thick-fleshed, two-locule pods 6 to 8 inches long and about 2 inches across that are picked bright green at roughly 70 days for roasting, or left to turn mahogany and then red near 95 days for ristras and dried red chile. Heat is mild to medium. The thick walls take a direct flame well, blister cleanly and peel easily, which is why it dominates commercial roasting. Give it a long, hot season and full sun.
