Overview
Cubanelle is the Cuban-style frying pepper: elongated, slightly tapered fruit about 6 inches long and 2 inches wide with rounded ends, waxy yellowish green when picked at about 65 days and turning orange-red if left. Walls are only medium thick, which is exactly why it fries so well and cooks quickly. Heat is negligible, at most 1,000 Scoville units. Start seed 8 to 10 weeks before the last frost, keeping the mix warm, and transplant when the soil is above 60F. Plants are prolific; a midseason side-dressing keeps them going. Standard in Italian and Cuban kitchens for frying, stuffing and sausage-and-pepper sandwiches.
