Overview
Anaheim is the mild California form of the New Mexico chile, named for the town where Emilio Ortega began growing it in the early 1900s. Long, tapered pods around 6 inches ripen from green to red (the red stage is sometimes called colorado), with a gentle 500 to 2,500 Scoville heat and a smoky flavor once roasted. Start seed 8 to 10 weeks before the last frost with bottom heat, then transplant after nights stay above 55F, spacing about 18 to 24 inches in a sunny bed. Harvest green for chile rellenos and roasting, or let pods go red for a sweeter, deeper flavor and for drying. Note: some catalog listings describe a different, heatless jalapeno-shaped pepper under this name.
