Overview

Emerald Giant, from Northrup, King and Co. (1963), is the archetypal big green bell: large, blocky, mostly four-lobed fruit with thick flesh, deep glossy green and ripening to red if left, similar to Florida Giant. Start seed 10 to 12 weeks before transplanting and set into rich, well-drained ground in a sunny bed once frost is past; feed at planting and again mid-season, with calcium available, to keep blossom end rot away. In very hot summers fruit set drops and exposed fruit can sunscald, so aim for spring and fall crops in the South. Thick walls give plenty of flesh for stuffing and slicing.
