Overview
Pepper 'Ají Amarillo' (the catalog name is garbled; the clean form is Ají Amarillo) is the Andean Capsicum baccatum considered the most important ingredient in Peruvian cooking. It is hot, sweet and fruity. Young fruit is green, turns yellow and ripens a fiery orange; it cooks to a yellow color, which gives the pepper its name, and the dried form is called Ají Mirasol or Cusqueño. Peru has more pepper diversity than anywhere, and this is the most popular of them. Give it a long warm season. Use it in sauces, ceviche and papas a la huancaina, and try pairing it with huacatay (Peruvian black mint).
