Overview

NuMex Big Jim is the classic long green chile of New Mexico, released in 1975 by Dr. Roy Nakayama at New Mexico State University. It became famous as a Guinness record holder for pod length: typical fruit run around 8 inches, and well-grown plants can push individual pods to 12 or 13 inches with walls thick enough to stand up to roasting. Heat is medium, so it works for people who want flavor first. Sow indoors 8 to 10 weeks ahead of the last frost, then move plants into warm, well-drained ground and keep the water steady if you want the biggest pods. The huge size means a single fruit can be stuffed whole for chiles rellenos without cutting it open. Roast over a flame or under the broiler, peel, and freeze the harvest the way Hatch growers do.
