Overview
Canary is a yellow bell hybrid from Stokes Seed, introduced in 1997. The blocky four-lobed fruit are about 5 inches (130 mm) square with thick walls, going from green through a green-yellow stage to a clear bright yellow at full ripeness. Maturity is around 72 days from transplant. It carries resistance to two strains of tobacco mosaic virus. Yellow bells are sweeter and milder than green ones, so let them finish coloring on the plant when you can; the thick walls hold up well for roasting and grilling.
