Overview

Pasilla Bajio is the chile grown for pasilla, the dried pod whose name means little raisin. Fresh, it is known as chilaca: narrow, wrinkled, drooping fruit 6 to 9 inches long that go from dark green to nearly black and dry to a deep reddish-black. Flavor is smoky and earthy with dried-fruit notes, and heat is medium, roughly 1,000 to 2,500 Scoville units. Along with ancho and mulato it is one of the three chiles behind a classic mole negro.
