Overview
Aji Crystal is a Chilean pepper of the Capsicum baccatum species, recognizable by the spotted markings on its flowers. Plants reach about 3 feet and carry waxy fruit around 1 1/2 by 3 1/2 inches that ripen from a pale, almost translucent light green to yellow and then a light reddish orange. Picked pale, the pods are crisp and mildest; ripened orange-red they turn sweeter and more complex. Baccatum seed wants warmer germination, 80 to 85F, and a longer indoor start of 6 to 8 weeks or more. Maturity is around 90 days from transplant. Good for fresh salsas and for the Chilean-style pickled and sauced aji.
