Overview

Ancho 101 is an open-pollinated ancho chile from Johnny's, introduced in 1997. The pods are 5 to 6 inches (100 x 50 mm), two- to three-lobed and thin-walled, very dark green and called poblano at that stage, then ripening to a dark mahogany red for drying as ancho. Pungency is mild. Plants are tall and rangy, and the variety is adapted to warm climates with cool nights. Green pods can come as early as 68 days, with 80 days a safer figure from transplant. Roast and stuff the green fruit, or dry the ripe red ones.
