Overview

Aji Dulce is the seasoning pepper of the Caribbean: a Capsicum chinense that carries the shape, size, thin wrinkled skin and unmistakable floral aroma of a habanero with almost none of the burn (about 0 to 500 Scoville units). This Venezuelan heirloom grows on plants around 18 inches tall and sets pendant fruit roughly 2 by 1 inches, tapered at both ends, ripening from green to orange-red and then red. Start seed early indoors, 10 to 12 weeks before the last frost, since chinense types are slow, and set out only after the soil is warm. In frost-free areas it can behave as a short-lived perennial. Use it wherever a recipe calls for sofrito or recao; it is the ingredient that gives Puerto Rican, Cuban and Venezuelan cooking its aroma without the heat.
