Overview
Pimento is the classic heart-shaped sweet pepper: round, smooth fruit about 3.5 inches, green ripening to deep red, with thick walls and a sweeter, more aromatic flavor than a bell. Start seed 8 to 10 weeks before the last frost and transplant into fertile, well-drained soil once frost is past. Harvest fully red, then roast, peel and preserve in oil, or use fresh. This is the pepper behind stuffed olives and pimento cheese. Compact plants yield well in small beds or containers.
