Overview
Piquillo is the little-beak pepper of northern Spain, made famous by the Piquillo de Lodosa denomination in Navarra. Compact, productive plants set small triangular fruit 2 to 3 inches long that ripens to a vivid scarlet with a pointed tip. Flesh is thin but very sweet with a faint bitterness that roasting balances; heat is negligible. Start seed 8 to 10 weeks before the last frost and set out in a sunny, fertile bed after frost. Harvest fully red, char over flame or under the broiler, steam, peel and seed; then stuff or pack in jars, as they do for tapas.
