Overview
Mulato Isleno is the poblano-type chile grown for mulato, the dark dried pod that, with ancho and pasilla, forms the base of mole negro. Fruit are about 6 by 3 inches, dark green and ripening to a rich chocolate brown rather than red. The brown stage is the point: dried mulato has a smokier, deeper flavor than ancho, with hints of chocolate, coffee and dried fruit. It needs the whole summer, with green pods possible around 76 days and full brown ripeness well after. Plant in full sun in rich ground with good drainage, let the pods turn fully brown on the plant, then dry them in a dehydrator or low oven until leathery and pliable.
