Overview

Zavory is a habanero with the heat bred out: roughly 100 Scoville units instead of 30,000 or more, while keeping the fruity, floral aroma that makes habaneros interesting. Plants grow about 30 inches and branch well, carrying shiny, bullet-shaped fruit that pass through green, yellow and orange to a cardinal red; any stage is edible. As a Capsicum chinense it germinates slowly, so start seed 8 to 10 weeks before the last frost with bottom heat and plant out once the soil is thoroughly warm. Maturity is around 90 days, so give it the hottest, sunniest spot you have. Made for cooks who want habanero flavor in salsa, chutney or salad without the burn.
